Casale Triocco is the best wine of the Spoleto-Ducale wine-cellar. Some years ago eleven producers of this area began a project named “Qualitŕ” (quality); the most appropriate areas were selected, the growing techniques were modified and finally the yield per hectar was reduced. In this way they succeded in producing excellent wines. All the wines of Casale Triocco are the expression of the local wine sorts and of the area Montefalco. The most important wine-sorts are the Sagrantino and the Grechetto together with the traditional wines of the area, the Trebbiano and the Sangiovese.
Il Grechetto, nonostante sia stato per anni poco considerato anche nella sua terra d'origine, e' in realta' un' uva capace di produrre vini molto interessanti, con una piacevole freschezza unita a una buona struttura.
Di grande struttura e longevita', frutto delle piu' recenti scoperte autoctone dell' Umbria.Da provare con formaggi stagionati, magari un pecorino piccante.
